For a gluten free option substitute couscous for quinoa. It has a similar texture and flavor but none of the gluten. In this recipe we make a jeweled quinoa that is a perfect base for middles east dishes.

Quinoa makes a great substitution for couscous. In this recipe we add, almonds, fresh herbs, pomegranate and cardomom for a great gain base for any Mid East dish.

Jeweled Instant Pot Quinoa
- 1 C Quinoa
- 1.5 C Water or broth
- 4 tbsp Sliced Almonds
- 3 Cardamon Pods
- 1/4 C Pomegranate Seeds
- 1/2 C Parsley
- Spray cooking spray on the bottom of the Instant Pot.
- Add the Quinoa into the instant pot with the broth, sliced almonds and cardamom pods. Cook under pressure for 1 minute and allow the pressure to naturally release for 10 minutes.
- After 10 minutes release any remaining pressure and remove the lid. Remove the cardamom pods.
- Fluff with a fork and add fresh chopped parsley and pomegranate seeds.
- It's now ready to serve.
