Instant Pot Salmon Recipe | Salmon in Pink Sauce

Ingredients
- 2-3 Frozen Salmon Fillets 1/4 C creme
- Zest form lemon
- 4 tbs of white wine
- 1-2 C Cherry tomatoes or grape tomatoes *
- 1/4 tsp salt
- 1/2 tsp sweet or mild paprika 1/2 tsp dijion mustard
- 5 or more fresh basil leaves 1 clove of garlic
- Mashed Potato Ingredients:
- 3 lbs golden potatoes (sub cauliflower for a low carb option)
- 2-3 Cups of water (1 cup if us- ing cauliflower)
- 1/2 tsp salt 4 tbs butter
- 1/2 milk or cream (or as need- ed)
- * Note if using sun dried toma- toes only use 1-2.
Instructions
- Step 1: wash and cut potatoes. I like to use golden potatoes and leave the skin on. Place cut potatoes directly into the main insert of the instant pot. Add 2-3 cups of stock depending on the amount of potatoes you used. Add 2 tsp of salt.
- Step 2: Prepare the Sauce. Add all the sauce ingredients to a blender and puree till smooth.. In the secondary insert or cake pan, pour in the sauce. Because nothing evaporates in the Instant Pot we are using way less liquid than would traditional be used in this recipe.
- Step 3: Please note it is important that the salmon is frozen. Oth- erwise it would be way over done by the time our potatoes cook. If you want make cauliflower instead of potatoes then you can have the salmon fully defrosted.
- Layer 2-3 pieces of salmon on top of the sauce. Sprinkle pieces of salmon with salt. Cover the insert with foil or a lid and place it into the main insert setting it right on top of the potatoes. Use the trivet that came with your instant pot as this makes it easier to to get the smaller insert out without burning your hands. Cook under pressure for 10 mins. Immediately release when done.
- If make cauliflower and salmon cook for 4 minutes under pressure and immediately release.
- Step 4: remove the secondary insert from the pain. The salmon may have spots that aren’t cooked though in the ares where it was stacked. This is normal. We are going to brown the fish under the broiler and we don’t want it over done so have it slightly underdone when we remove it form the Instant Pot is perfect.
- Take the salmon and place it in a baking dish. Some of the sauce should be clinging to the top of the salmon and this will brown as the salmon cooks under the broiler. Place the baking dish with the salmon under the broiler on the top rack. Watch it closely because you don’t want it to be come over done.
- Step 5: Now we will mash the potatoes. The potatoes in the Instant Pot should be perfectly cooked . Drain them and return to the Instant Pot Insert. You can mash them right in the pot using a stick blender or you can use a stand mixer to whip them. Before mashing the potatoes add 4 TBS of butter and 1/4 cup milk or creme to the potatoes. When mixed taste and season with more salt if needed.
- Note: Be careful not to over-work the potatoes. They have a tendency to become glue like if mixed too much.
