No matter what you call it, nacho cheese sauce, queso, cheese wiz, it’s just delicious. We all love gooey cheese sauce, but what I don’t like are processed foods and chemicals. This recipe uses only real food and no gluten.

My husband isn’t a big football guy, but he likes watching Super Bowl and when he does watch the Super Bowl he likes to eat nachos. It’s a pretty consistent annual request. While melted cheese and some toppings piled on top of chips isn’t bad, there’s always the layering issue. Those first few bites of cheesy goodness are so nice, but then soon you’re left with naked chips which are kind of a let down.
The prefect remedy to this is a nacho cheese sauce, or queso cheese, that really covers the chips and gets into all those crevices. The problems with that though is how horribly processed those cheese sauces are. While irrestiably delicious, it’s also full of something called “cheese food”. I mean they can’t even call it actual cheese so what is in that stuff?
Thankfully through the magic of science I discovered how to make a ridiculously delicious cheese sauce is that has the same silky mouth feel and intensely real cheese flavor.
The secret is arrowroot and egg yolks. This combination of starch, fat, and protein create a glue that thickens the milk and binds the cheese to create that same texture that we usually associate with something highly processes. Now you can have all the fun of a Mexican Queso without any of the guilt.

When we made this recipe in my weekly cooking class I felt a little bad that we were doing nacho cheese sauce. I thought it’s not a very fancy recipe for a cooking class. However everyone loved it and it was a huge hit with the kids.
