Instant Pot Chicken Tacos
The internet is full of Instant Pot Chicken Tacos. Most of the recipes go something like ‘add chicken and pour in a jar of salsa’ and while that’s not bad, it’s a far cry from these amazing Instant Pot Chicken Tacos. This is a recipe I labored over for a long time trying to get the flavors just right and when I finally nailed it there was dancing in my kitchen and lots of taco eating.
I will warn you these tacos are a bit messy. The meat soaks in so much flavor from the cooking liquid, but it is a really soupy recipe. It soaks the tortillas and for that reason I like use homemade tortillas because they hold up a bit better. Another thing I’ve done is use this taco filling to make a tamale pie. It’s perfect for this adaptation because the sauce of the chicken is largely absorbed by the corn dough topping and it is so delicious. That’s a recipe I’ll add later. For now though, I hope you enjoy making those chicken tacos in the Instant Pot.
Chicken Tacos in the Instant Pot
When I first moved to California I discovered this amazing mom and pop taco shop that did these chicken tacos unlike any I have had before or since. They were wet and soupy, an absolutely delicious mess that would run down your arm and stain clothes. They were worth every dry cleaning bill! I’m sure these tacos have a name but I have never been able to figure out what it is.
For years and years since I have tried to re-create them and always fell a little short.
I make this recipe in the Instant Pot but it could also easily be made in the crock pot or braised in a dutch oven. The process is exactly the same, the only difference is the time it takes to cook.
This recipes uses a whole chicken cooked in a flavorful braising sauce and then the meat is pulled from the bone shredded and added back to linger in the sauce and soak up the flavor.
