Instant Pot Albondigas

Ingredients
- Meat Ball Ingredients:
- I lb Ground Beef, Ground
- 1 TBS Taco Seasoning
- 1 tsp oregano
- 1 tsp salt
- 1/4 c rice
- 1/4 Onion diced
- I egg
- Soup Ingredients:
- 1.5 qt Bone Broth Beef or Chicken
- 2-3 Zucchini or yellow squash
- 2 large carrots
- 3/4 Onion Diced
- 2-3 Ripe Tomatoes
- Juice of one lemon
- 1-2 TBS of Chipotle in Adobo sauce
- Salt to taste
- Fresh Toppings:
- Avocado
- Sour Cream
- Cilantro
- Mexican Cheese
Instructions
- Step 1: Add all the ingredients for the meatballs and mix well. I find using my hands really helps to incorporate all the ingredients.
- Step 2: Make golf ball sized meatballs and place them directly in the bottom of the instant pot
- Step 3: Chop your vegetables. Because we are cooking this under pressure we want large rustic pieces of vegetables otherwise they will be mush by the time our meatballs cook. I cut all my vegetables in at least 1 inch pieces. I nestle the veggies around the meatballs in a way that keeps them from getting smashed or losing their shape.
- Step 4: Add the one broth to your pot ad set the timer for 5 mins. Once cooking is complete immediately release the pressure.
- Step 5: At the end of cooking I like to add a couple extra optional ingredients. I add 1-2 tbs of the adobo sauce from canned Chipotle peppers. This adds some spice to adjust to your personal preference. I also add the juice of one -two lemons or limes. The extra acid adds a brightness to this soup that I feel it cannot do without, but again trust your own taste buds here.
- Step 6: Serve the soup and top with our favorite ingredients.
- Note: If you’ve made homemade stock it can be very bland and you may need to add a good amount of salt.
